Best Ever Brownies

1 egg 1 c. light brown sugar
¾ c. Hershey’s syrup 1½ c. flour
¼ tsp baking soda Dash of Salt
1 stick melted butter ¾ c. chopped pecans, optional

Heat oven to 350°F, grease a 9″ square baking pan. Beat egg, add brown sugar & syrup, beating until well blended. Stir together flour, baking soda, & salt; add to egg mixture, beating until blended. Fold in butter & nuts. Bake 30-40 minutes.

Apple Cranberry Crisp

3 c. unpeeled chopped apples 2 c. raw cranberries (or Craisins)
1 c. granulated sugar 1½ c. oats
½ c. packed brown sugar 1/3 c. flour
1/3 c. chopped pecans ½ c. melted butter

Combine apples, cranberries, & sugar in an 8″ square dish, mix thoroughly to blend, then set aside. Combine the rest of the ingredients until crumbly & spread evenly over fruit layer. Bake at 350°F for 1 hour or until fruit is fork tender. Great served warm with ice cream!

Mocha Chip Cookies

Yields About 2 Dozen large Cookies

1 c. softened butter 1 c. brown sugar
1 1/3 c. white sugar 2 eggs
1 tbsp vanilla extract 1 tsp baking soda
1 tsp baking powder 1 tsp salt
3½ c. flour 2 tbsp crushed instant coffee
16 oz. chocolate chips  

1. Cream the butter & sugars until fluffy.
2. Beat in eggs & vanilla extract.
3. Combine dry ingredients & beat into butter mixture.
4. Stir in chocolate chips.
5. Bake at 375°F on parchment for 11-14 min., depending on how big you make the cookie.

Pasta with Sausage & Vegetables

1lb tube pasta (rigatoni, penne, etc.) 1 tbsp olive oil
1lb kielbasa sausage, cut into 1″ chunks 2 bell peppers (1 red & 1 yellow), diced
2 c. broccoli florets, bite size 1 tbsp minced garlic
1 14oz. can chopped tomatoes 1 c. shredded mozzarella

Cook pasta per directions until firm-tender. While pasta cooks, heat oil in a nonstick skillet over medium heat. Add sausage & heat through. Remove with a slotted spoon & set aside. Add peppers, broccoli, & garlic & cook until crisp-tender. Stir in tomatoes & add sausage back. Increase heat to high & cook uncovered until hot, stirring often. Drain pasta & return to pot. Add sausage mixture, then toss to mix. Spoon into serving dish & top with cheese.

Taquito Bake

20-24 frozen Taquitos (corn is best) 1 small can enchilada sauce
2 c. shredded cheddar 1 small can sliced black olives
sour cream shredded lettuce
chopped tomatoes  

Place frozen taquitos in 9″x13″ pan, cover with enchilada sauce. Top with cheese & olives. Bake at 350°F for 35 minutes. Garnish with lettuce, sour cream, &/or tomatoes before serving.
