Broccoli & Ham Hot Dish

Debbie Says: A great old dish.  You can use plain or crinkle cut french fries for a fun variation.

Broccoli & Ham Hot Dish

Ingredients
  • 1 bag French fries, frozen
  • 1 sm. box frozen broccoli pieces, thawed & drained
  • 2 c. ham, cubed
  • 1 can Cream of Mushroom soup
  • 1 c. mayonnaise
  • 1 c. milk
  • 8 oz. cheddar cheese, shredded
Instructions
  1. Preheat oven to 350°F. Grease a large casserole dish or 9″x13″ baking dish.
  2. Layer frozen french fries, broccoli & cubed ham evenly on the bottom of your dish/pan.
  3. Mix soup, mayonnaise & milk together. Pour evenly over other ingredients in baking dish. Spread cheese evenly on top.
  4. Bake for 30 minutes, or until warmed thoroughly.

Brad’s Bachelor Chicken and Rice

Serves Approximately 4

Ingredients

1 lb. chicken breasts 1 pkg. Chicken Rice-a-Roni
1 tbsp butter 2½ c. water
6 oz. broccoli (1 pkg)

Directions

  1. Dice breasts & prepare to brown in a large skillet.
  2. As you get started, add butter as specified on rice box & prepare as if there was no chicken.
  3. Chop & add broccoli before the boil off step for the rice & cover as per directions on the box.

Broccoli Casserole

Awhile back, the church my husband’s family attends in Oregon put together a recipe book as a fundraiser for the church.  It is a professionally printed and bound book, Generations of Cherished Recipes from St. Thomas Becket Parishioners.  My mother-in-law gave me a copy for Christmas because the family submitted heavily, so it was her way of passing on a lot of their family recipes to me.  So I’m going to periodically publish some of the recipes bestowed upon me and spread the love!

Serves 4

Ingredients

10 oz. frozen broccoli (1 pkg) 1 pint cottage cheese
1 egg, beaten 1 pkg saltine crackers
1 cube butter or margarine 1 pkg Lipton Onion Soup mix

Directions

  1. Broccoli by sk8geek on FlickrMelt butter.  Mash crackers.  Mix together.  
  2. Cook broccoli as directed on package.  Do not drain the broccoli.  
  3. Mix everything together and bake at 350°F for about 45 minutes until brown on top.

Pasta Salad

Ingredients

1 pkg multicolored spiral pasta 1 small head broccoli, cut into florets
¼ cauliflower, cut into florets 1 c. cherry tomatoes, quartered
1 small can sliced black olives 1 c. Parmesan cheese
1 c. chopped bell pepper (any variety) 1 bottle Italian dressing

Directions

  1. Cook pasta as directed on package, then rinse & cool under cold water. 
  2. Combine all ingredients in a large bowl & mix thoroughly. 
  3. Cover & refrigerate; serve chilled. 
  4. Receipe works well doubled or tripled for a crowd.

Pasta with Sausage & Vegetables

Ingredients

1 lb. tube pasta (rigatoni, penne, etc.) 1 tbsp olive oil
1 lb. kielbasa sausage, cut into 1″ chunks 2 bell peppers (1 red & 1 yellow), diced
2 c. broccoli florets, bite size 1 tbsp minced garlic
1 14oz. can chopped tomatoes 1 c. shredded mozzarella

Directions

  1. Cook pasta per directions until firm-tender. While pasta cooks, heat oil in a nonstick skillet over medium heat. 
  2. Add sausage & heat through. Remove with a slotted spoon & set aside. 
  3. Add peppers, broccoli, & garlic & cook until crisp-tender. Stir in tomatoes & add sausage back. 
  4. Increase heat to high & cook uncovered until hot, stirring often. Drain pasta & return to pot. 
  5. Add sausage mixture, then toss to mix. 
  6. Spoon into serving dish & top with cheese.
