Ground Turkey Pockets

Ingredients

1 can (10¾ oz.) condensed Cream of Chicken soup 2 tubes (17.3 oz.) refrigerated southern style biscuits
1 tbsp flour ½ tsp salt
¼ tsp pepper ½ c. sliced carrots
½ c. canned corn ½ c. shredded mozzarella cheese
1 egg, lightly beaten 1½ lb ground turkey

Directions

  1. In a nonstick saucepan, over medium heat, brown turkey & drain. Combine soup, beaten egg, flour, salt, & pepper. Add mixture to turkey.
  2. Cook, stirring occasionally, for 5 minutes. Add carrots & corn. Cook for 2 more minutes. Remove from heat & stir in cheese.
  3. On a floured surface, pat 8 of the biscuits into circles. Top each biscuit with 2/3 c. of turkey mixture. Pat remaining biscuits into 5″ circles & place on top of turkey. Seal edges with water.
  4. Press edges together with a fork dipped in flour. Place on an un-greased baking sheet. Bake at 375°F for 12-14 minutes or until golden brown.

Old World Manicotti

Ingredients

12 large manicotti shells 4 c. shredded mozzarella cheese, divided
2 c. ricotta cheese 6 tbsp chopped fresh basil or
1 (26 oz.) jar prepared spaghetti sauce, divided 2 tbsp dried basil
½ c. grated Parmesan or Romano cheese

Directions

  1. Manicotti Before Cooking by I Believe I Can Fry on FlickrPreheat oven to 350°F. Spray 13″ x 9″ baking dish with nonstick cooking spray.
  2. Cook pasta according to package directions. Drain; rinse with cool water. Let pasta dry on paper towels.
  3. For filling, in medium bowl, stir together 3 c. mozzarella with the ricotta & fresh basil. Using a teaspoon, carefully stuff pasta shells with prepared cheese mixture.
  4. Spoon 2 c. spaghetti sauce into prepared baking dish. Arrange stuffed pasta over sauce. Pour remaining spaghetti sauce over top of pasta. Sprinkle with remaining mozzarella.
  5. Bake manicotti for 15 minutes. Sprinkle with the Parmesan; bake for 10 minutes longer. Serve immediately.

Pasta with Sausage & Vegetables

Ingredients

1 lb. tube pasta (rigatoni, penne, etc.) 1 tbsp olive oil
1 lb. kielbasa sausage, cut into 1″ chunks 2 bell peppers (1 red & 1 yellow), diced
2 c. broccoli florets, bite size 1 tbsp minced garlic
1 14oz. can chopped tomatoes 1 c. shredded mozzarella

Directions

  1. Cook pasta per directions until firm-tender. While pasta cooks, heat oil in a nonstick skillet over medium heat. 
  2. Add sausage & heat through. Remove with a slotted spoon & set aside. 
  3. Add peppers, broccoli, & garlic & cook until crisp-tender. Stir in tomatoes & add sausage back. 
  4. Increase heat to high & cook uncovered until hot, stirring often. Drain pasta & return to pot. 
  5. Add sausage mixture, then toss to mix. 
  6. Spoon into serving dish & top with cheese.

TexMex Casserole

Ingredients

1 can enchilada sauce 1 can chopped green chilies
1 can Cream of Mushroom soup 1 lb. ground beef
1 pack of taco seasoning 1 pack of Mozzarella/Cheddar Grated Cheese
1 bag of White Corn Tostitos ½ chopped onion

Directions

  1. Cook hamburger meat & onion & taco seasoning. 
  2. Drain meat & onions & place into bowl add cream of mushroom soup & enchilada sauce. 
  3. Add chilies & make sure it stirred up well. 
  4. Place tortilla chips into a casserole pan & place ingredients from bowl in on top of chips. 
  5. Preheat your oven to 350°F for 10-15 minutes. 
  6. Place shredded cheese on top of meat mixture in casserole dish; place into the oven & when cheese is melted take out of oven.

Easy Italian Mini-Meatloaves

Ingredients

1 lb. ground beef 8 oz. Stove Top stuffing
1¼ c. water ¾ c. spaghetti sauce
Italian seasoning shredded mozzarella cheese

Directions

  1. Preheat oven to 375° F.
  2. Spray muffin pan with cooking spray or lightly grease with butter or margarine.
  3. Mix water, ground beef & stuffing together. You should be able to make a small ball with a handful of mix without it falling apart.
  4. Fill each muffin cup at least half way with meatloaf mix. Make indentation in center of each meatloaf with a spoon.
  5. Pour a little spaghetti sauce in the middle of each indentation. Sprinkle with Italian seasoning & shredded mozzarella (as much as you’d like).
  6. Bake for 30 minutes. Cool for at least 10 minutes before serving.
