Aloo JeeraAsafoetida may look like a typo, but it’s a dried latex derived from roots used in middle eastern cuisine.  It’s supposed to taste similar to leeks when cooked.

Ingredients
  • ½ kg. potatoes
  • 1 tbsp cumin
  • ¼ tsp turmeric powder
  • ¼ tsp asafoetida
  • ½ tsp mustard
  • 2 tsp chili powder
  • 2 tbsp oil
  • Salt to Taste
Instructions
  1. Take a microwave safe bowl, add oil with cumin, asafoetida and turmeric powder.
  2. Microwave for thirty seconds. Put the potato pieces into it.
  3. Microwave on 600 Watt power for five minutes. Stir in between.
  4. Add salt and mix well. Continue to microwave for another ten minutes.
  5. It gives a nice crisp look. Add chili powder and give a toss.
  6. You can again microwave for 30 seconds if you wish.

 

Mexican Lasagna

Ingredients

2 pkg corn tortillas (18) 1 tsp black pepper
1 lb. ground beef, browned & drained 1 tsp cumin
16 oz. chopped tomatoes, drained 1½ c. Cheddar cheese, shredded
1 tbsp chili powder 1½ c. Mozzarella cheese
1 tsp red pepper 16 oz. cottage cheese
2 eggs, beaten black olives (garnish)
green onions (garnish)

Directions

  1. Line bottom of 13″x9″ pan with half the tortillas.  Combine ground beef, tomatoes, & seasonings.  Spread on top of tortillas.  
  2. Add another layer of tortillas.  Mix cottage cheese, 1 c. Cheddar, 1 c. Mozzarella, eggs; spread on top of tortillas.  
  3. Bake at 350°F for 30 – 40 minutes. Remove from oven & top with remaining cheeses. 
  4. Garnish with chopped green onions & black olives.

Randilicious Chili

Ingredients

1 large onion, finely chopped 4 cloves garlic, minced
1 green bell pepper, finely chopped 1 jalapeno pepper
2 tbsp tomato paste 2 tbsp butter, cut into pieces
¼ c. all-purpose flour 1 tbsp dried oregano, crushed
1 tsp ground cumin 2 tsp crushed red pepper
½ c. chili powder 14.5 oz. diced tomatoes with liquid (1 can)
1 lb lean ground turkey 15.25 oz. kidney beans, drained and rinsed (1 can)
2 tbsp Jack Daniels whiskey salt & ground black pepper to taste

Directions

  1. Brown the ground turkey with ½ the onion, ½ the garlic (2 cloves), & 1 tbsp chili powder.  Set aside.
  2. In a large skillet over medium heat, combine remainder of onion, garlic, & tomato paste. Cover & cook for 5 minutes.
  3. Stir in butter until melted. Stir in flour, oregano, cumin, red pepper, chili powder, tomatoes, beef, & Jack Daniels. Cook uncovered for 8 minutes, stirring occasionally.
  4. Stir in the beans & cook for another 4 minutes, stirring occasionally. Salt, pepper, & other spices to taste.
  5. Simmer covered at low heat until serving time.

Mooby-Que Sauce

Yields 2-3 cups

Ingredients

1 can tomato sauce 1 can tomato paste
2 tbsp olive oil 2 tbsp vinegar
¼ c. molasses 2 tbsp brown sugar
3 cloves garlic, crushed 4 tbsp red or white onion, minced
2 tbsp red pepper, minced 1 tbsp Worcestershire sauce
1 tsp cumin 1 tsp chipotle chili pepper

Directions

  1. Cook the garlic, onion, & red pepper until it’s soft, & then add all the rest of the ingredients. 
  2. Simmer on low for 20-30 minutes. Keep stirring it often so it doesn’t burn, then refrigerate for a few days before you use it. This allows the flavors to blend & mellow. 
  3. The cumin & chipotle chili pepper can be substituted by any of your favorite spices.

Cumin Dusted Tortillas

Ingredients

12 flour &/or blue corn tortillas, quartered 1 tbsp ground cumin
1 tbsp kosher salt peanut oil (for deep frying)

Directions

  1. Cumin by artizone on FlickrHeat 2″ of peanut oil in a high-sided pan to 360°F.
  2. Fry the tortillas, in batches, until light golden brown.  Drain on paper towels & season immediately with cumin & salt.

Chef’s Note: Goes well with Guacamole.
