Peanut Butter Balls

Serves 6-8

Ingredients

2 sticks of margarine or butter 1 1/3 c. crunchy peanut butter
1lb. powdered sugar 1 c. graham cracker crumbs, finely crushed
1-2 pkg. semi-sweet chocolate chips ¼lb. paraffin/bakers wax

Directions

  1. Mix all ingredients together slowly in order above except for the chocolate chips & bakers’ wax.  Roll into small balls & chill at least 6 hours.
  2. Melt semi-sweet chocolate chips and wax.  Mix well.  Use a spoon & toothpick to dip balls into chocolate.  
  3. Place on a cookie sheet covered with wax paper.  Let cool/dry, then enjoy.  Keep refrigerated for best taste.

Low Fat Chocolate Chip Banana Nut Bread

Ingredients

2 eggs 2/3 c. white sugar
4 very ripe bananas, mashed ¼ c. apple sauce
1/3 c. nonfat milk 1 tbsp extra virgin olive oil
1 tbsp vanilla extract 1 tbsp Kahlua
1¾ c. all purpose flour 2 tsp baking powder
½ tsp baking soda ½ tsp salt
1/3 c. chopped walnuts 1 c. chocolate chips

Directions

  1. Preheat oven to 325°F. Spray bread pan with non-stick cooking spray then lightly dust with flour.
  2. In a large bowl, beat eggs & sugar until light & fluffy. Beat in bananas, apple sauce, milk, olive oil, vanilla extract, & Kahlua.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, & salt.
  4. Stir flour mixture into banana mixture, mixing until well blended.
  5. Fold in walnuts & chocolate chips. Pour batter into prepared pan.
  6. Bake in preheated oven until golden brown & a toothpick inserted into the center of the loaf comes out clean (usually around 1 hour). 
  7. Turn bread out onto a wire rack & let cool.

Easy Fudge

Ingredients

16 oz container of cake frosting (your choice of flavor) 12 oz bag of chocolate chips

Directions

  1. The great thing about this recipe is the possibilities are endless. 
  2. You decide what flavors would go well together, then you melt the chips over medium heat. 
  3. Remove from heat & stir in the frosting. 
  4. Pour into a container (8″x8″ makes for a thickness of about an inch, which seems reasonable for fudge) & chill in the fridge until set.

Chef’s Note: You would think that with how simple this is, it would taste “cheap” or not “real” but let me tell you – it’s INCREDIBLE. So far I’ve tried Butterscotch (chips) & Dark Chocolate Fudge (frosting), & also I’ve done White Chocolate (chips) & Strawberry (frosting). Both were divine, & taste every bit as rich & decadent as a much more complicated recipe or something that would cost $10 a pound at a gourmet shoppe. Enjoy!

Mocha Chip Cookies

Yields About 2 Dozen large Cookies

Ingredients

1 c. softened butter 1 c. brown sugar
1 1/3 c. white sugar 2 eggs
1 tbsp vanilla extract 1 tsp baking soda
1 tsp baking powder 1 tsp salt
3½ c. flour 2 tbsp crushed instant coffee
16 oz. chocolate chips

Directions

  1. Cream the butter & sugars until fluffy.
  2. Beat in eggs & vanilla extract.
  3. Combine dry ingredients & beat into butter mixture.
  4. Stir in chocolate chips.
  5. Bake at 375°F on parchment for 11-14 min., depending on how big you make the cookie.

Bailey’s Cake

Cake Ingredients

1 box dark chocolate cake mix 1 small box chocolate or chocolate fudge pudding mix
1 egg, slightly beaten 1 c. sour cream
¾ c. Bailey’s 12 oz. chocolate chips

Bailey’s Buttercream Frosting Ingredients

½ stick butter, softened ¾ c. unsweetened cocoa powder
4 c. powdered sugar 1½ tsp. vanilla extract
1 c. Bailey’s

Cake Directions

  2. Stir in chocolate chips. 
  3. Bake at 30-35 minutes in 2 8″ or 9″ round pans. 
  4. Check with toothpick for doneness. Be careful not to over bake.
  5. Cool completely & ice with Bailey’s Buttercream Frosting.

Frosting Directions

  1. Cream the butter, add ½ of the powdered sugar & blend well. 
  2. Add the cocoa powder & vanilla. 
  3. Start pouring the Bailey’s over the icing while your beaters beat the rest of the sugar. Keep adding Bailey’s until it’s all in there. 
  4. Very creamy & wonderful!
