Peanut Butter Balls

Serves 6-8

Ingredients

2 sticks of margarine or butter 1 1/3 c. crunchy peanut butter
1lb. powdered sugar 1 c. graham cracker crumbs, finely crushed
1-2 pkg. semi-sweet chocolate chips ¼lb. paraffin/bakers wax

Directions

  1. Mix all ingredients together slowly in order above except for the chocolate chips & bakers’ wax.  Roll into small balls & chill at least 6 hours.
  2. Melt semi-sweet chocolate chips and wax.  Mix well.  Use a spoon & toothpick to dip balls into chocolate.  
  3. Place on a cookie sheet covered with wax paper.  Let cool/dry, then enjoy.  Keep refrigerated for best taste.

Chicken Salsa Soup

Serves 6-8

Ingredients

1¾ c. water 14 oz. chicken broth
½ lb. cut up boneless chicken 2 tsp chili powder
1-2 c. salsa 11 oz. corn
3 c. tortilla chips, broken ½ c. Monterey Jack cheese

Directions

  1. In a saucepan, combine water, chicken, broth, & chili powder; bring to a boil.  
  2. Reduce heat & cover for 8-10 minutes until chicken is done.  Add corn & simmer uncovered for 5 minutes.  
  3. Stir in salsa & cook another 10-15 minutes.  Stir regularly.  
  4. Top with tortilla chips & cheese.

Chili Cheese Taco Casserole

Terrific for a large group as a main entree or a meaty side dish!

Ingredients
  • 1 lb. seasoned ground beef, cooked & drained
  • 3 c. chili-cheese corn chips
  • 11 oz. mexicorn (drained)
  • 1 c. shredded cheddar cheese
Instructions
  1. Heat oven to 375°F & use an 8″ square baking dish. Mix cooked beef & corn together & spread half on bottom of dish.
  2. Top that with half of the corn chips & cheese. Add another layer of the beef & corn.
  3. Cover with foil & bake about 30 minutes.
  4. Add another layer of corn chips & cheese & bake about another 5-10 minutes uncovered until cheese is melted.

 

Crab Cocktail Dip

Serves 6-8

Ingredients

1 bottle cocktail sauce 16 oz. cream cheese
2 cans white lump crab meat, drained ½ tsp Worcestershire sauce
½ tsp garlic powder ¼ c. mayonnaise

Directions

  1. Mix all ingredients except cocktail sauce. 
  2. Spread onto a plate & pour cocktail sauce over the mixture, about half the bottle or more if you like; spread evenly. 
  3. Keep chilled until ready to serve. 
  4. Great with crackers, tortilla chips, or pita bread.
