Pound Cake

Ingredients

6 eggs 3 c. sugar
8 oz. Philadelphia cream cheese 3 c. flour
1 tsp vanilla 3 sticks salted butter
½ c. powdered sugar 2 tbsp concentrated lemon juice

Directions

  1. Layout cream cheese & butter to soften at room temperature. Then in a mixing bowl add butter& cream cheese together & mix in a mixer.
  2. Add sugar to mixture. Then add flour & eggs alternately.
  3. Add vanilla.
  4. Spray bunt cake pan with cooking spray, preferably the kind made for baking with flour.
  5. Bake in a preheated 325°F oven for 1 hour 25 minutes.
  6. Let the cake rest in the pan for 10 minutes, then invert onto a serving tray or plate.
  7. You can also make a glaze for the top of the cake. Mix the powdered sugar & lemon juice & drizzle over the top while still warm.

Chef’s Note: To change up the taste of your cake, you can add 1 tsp of either coconut or lemon flavoring instead of the vanila.

Chocolate Chip Cheesecake

Ingredients

1-9″ Oreo or graham cracker pie shell 3-8 oz. blocks cream cheese
3 eggs 1 c. mini chocolate chips
1 tsp pure vanilla extract ¾ c. sugar

Directions

  1. Preheat oven to 450°F.
  2. Rest eggs & cream cheese at room temperature.
  3. In mixer on high speed blend cream cheese & sugar until well blended & fluffy (4-5 minutes).
  4. Add eggs one at a time until well incorporated. Add vanilla & chips (reserve 2 tbsp chips for top). Mix until incorporated.
  5. Pour mix into pie shell, scatter remaining chips on top of pie. Place pie on a cookie sheet & place in the over.
  6. Bake for 10 minutes. Reduce oven temperature to 250°F. Bake for an additional 40-50 minutes. Start to check pie at 40 minutes. 
  7. When top is a little browned & just starts to crack, remove from oven.
  8. Let pie cool & refrigerate overnight prior to serving.

Cheddar Pineapple Bake

Ingredients

8 oz crushed pineapple 8 oz pineapple chunks
¼ c. + 2 tbsp all purpose flour 1/3 c. sugar
2 c. grated sharp cheddar cheese 35 Ritz crackers (1 stack)
½ c. melted butter

Directions

  1. Preheat oven to 350°F.
  2. Mix together the pineapple (do not drain), flour, sugar, & cheese and spoon into a 9″ greased square pan.
  3. Crush the crackers into crumbs & mix with the butter. Sprinkle it over the pineapple/cheese mixture in pan.
  4. Bake uncovered for 30 minutes.

Chef’s Note: You can double the recipe & cook in a 9″x13″ pan as well.

Za Jiang Mein (Pork & Bean Chinese Noodles)

Ingredients

3 tbsp extra virgin olive oil 1 lb ground pork
¼ c. brown bean sauce 2 tbsp sugar
¼ c. beer 1 lb Chinese noodles (non egg-based)
¼ c. chopped scallions ½ c. shredded cucumbers
3 cloves garlic, minced 1 tsp red pepper flakes
¼ c. bean sprouts (optional) 1 pkg tofu, chopped into small pieces (optional)

Directions

  1. Heat the oil in the wok. When oil is ready, add the garlic, then the pork. Brown evenly. If so desired, add tofu after pork has been browned.
  2. In a separate bowl, mix beer & brown been sauce. Blend well.
  3. Add the bean sauce mixture to the ground pork.
  4. Sprinkle sugar & red pepper flakes into sauce. Stir until the sauce is piping hot. Reduce heat & allow to simmer uncovered.
  5. As sauce simmers, in a separate pot, boil noodles in water for approximately 3 minutes. Drain the noodles.
  6. To serve, put noodles into a bowl, then spoon sauce over noodles. Garnish generously with scallions, bean spouts, & cucumber on top.

Chef’s Note: You can find the brown bean sauce in most Asian grocery stores.

Sweet & Sour Halibut

Ingredients

Sweet & Sour Sauce 2/3 c. sugar
¼ c. corn starch 8 oz. chicken broth
2/3 c. vinegar 1/3 c. ketchup
¼ c. soy sauce 1/8 tsp Tabasco sauce
1/3 c. pineapple juice 1 medium green pepper
1 medium red pepper ½ medium onion
2lbs Halibut 1 tsp pepper
1½ tbsp Old Bay Seasoning

Directions

  1. Combine the sweet & sour sauce, sugar, & corn starch. Add chicken broth, vinegar, ketchup, soy sauce, Tabasco, & pineapple juice. 
  2. Heat to a boil. Boil 1 minute until thickened.
  3. Sauté green pepper, red pepper, & onion until crisp & tender. Add sautéed vegetables to the sweet & sour sauce mixture.
  4. Mix together the flour, pepper & Old Bay seasoning. Cut halibut into bite sized chunks & dredge in this dry mix. 
  5. Deep fry until just done, add to sweet & sour sauce & serve with rice.
