Ingredients
  • 1 c. butternut squash, cubed
  • 1 c. Arborio rice
  • 3 c. hot vegetable stock
  • ⅓ c. dry white wine
  • ¼ c. Parmesan cheese, grated
  • ¼ c. Pecorino Romano cheese, grated
  • ½ onion, minced
  • 2 garlic cloves, minced
  • 3 tbsp butter
  • salt & ground black pepper to taste
Instructions
  1. Place squash cubes & 1 tbsp of butter into a skillet over medium heat. Stir occasionally until cooked through (roughly 10 minutes) then remove from heat & set aside.
  2. Melt remaining butter in a saucepan over medium-high heat. Add onion & garlic; cook & stir for 2 minutes until they begin to soften, then stir in the rice. Continue cooking & stirring until the rice is glossy from the butter, & the onion begins to brown on the edges, about 5 minutes more.
  3. Pour in the white wine; cook, stirring constantly, until it has evaporated. Stir in ⅓ of the hot vegetable stock; reduce heat to medium. Cook & stir until the stock has been absorbed by the rice, 5 to 7 minutes. Add half of the remaining stock, & continue stirring until it has been absorbed.
  4. Finally, pour in the remaining stock & butternut squash, & continue stirring until the risotto is creamy. Stir in the Parmesan cheese, & season to taste with salt & pepper. Finally top each individual serving with Pecorino Romano cheese.

  • 2-3 tilapia fillets
  • Extra Virgin olive oil
  • Chipotle Tabasco Sauce
  • minced onion
  • minced garlic
  • 3-4 pinches cilantro
  • pearl onions
  • salt & pepper
Instructions
  1. All of the above ingredients are to taste. Wrap all the ingredients into tin foil. Bake at 356° F.

  • 1 lb. ground beef
  • 1 pkg. onion soup mix
  • ⅔ c. water
  • ½ c. bread crumbs
Sauce
  • ⅓ c. ketchup
  • 3 tbsp brown sugar
  • 1½ tsp Dijon mustard
Instructions
  1. Preheat oven to 375° F.
  2. Mix together in a bowl, form into loaf shape onto a cookie sheet.
  3. Bake 40-45 minutes.
  4. Once done, combine the sauce ingredients & spoon over baked loaf.
  5. Cook an additional 5 minutes.

Cheesy Rice Casserole

Ingredients
  • 1 c. raw long grain rice
  • ¾ lb. Monterey Jack cheese, shredded
  • ¾ lb. cheddar cheese, shredded
  • 16 oz. sour cream
  • 7 oz. green chilies, chopped
  • ½ tsp salt
Instructions
  1. Bring to a boil 2 c. water (½ tsp salt added). Add rice; stir well & cover. When it comes to a boil, turn to low & cover for 50 minutes without lifting the lid.
  2. Spray a 3 qt. oven-proof casserole with nonstick vegetable spray. Preheat oven to 350°F.
  3. In a large bowl, mix all ingredients together. Bake in preheated oven 45 minutes uncovered. Serve hot as a side dish.

  • 3 lb. country style pork ribs
  • 1 small onion, sliced
  • 1 lemon
  • garlic powder
Barbecue Sauce
  • 14 oz. ketchup
  • 5 oz. water
  • ⅓ c. Worcestershire sauce
  • 1 tbsp brown sugar
  • 2-3 dashes Tabasco sauce
  • 1 tsp salt
  • Dash black pepper
Instructions
  1. Combine & bring to a boil.
  2. Place ribs on a flat pan. Sprinkle ribs with garlic powder. Arrange onion & lemon slices on top.
  3. Bake, uncovered, in oven at 450°F for 30 minutes. Drain. While ribs are baking, make the sauce.
  4. Place ribs, onions, & lemon in heavy baking dish or pan with lid. Pour hot barbecue sauce over ribs.
  5. Cover and bake in 325°F oven for 1½ hours.
