Cream of Crab Soup

Ingredients

3 tbsp all-purpose flour 1 oz. dry Hollandaise sauce mix
½ tsp dry mustard 4 c. half and half
¼ c. butter 2 tsp Old Bay seasoning
¼ tsp celery seeds 1 c. whipping cream
1½ tbsp cooking sherry 1 lb. Maryland crab meat

Directions

  1. In a medium bowl, blend flour, Hollandaise sauce mix, & dry mustard with two cups of half and half.
  2. Melt butter over medium heat in a 4 qt. saucepan.  Slowly add above mixture to melted butter, stirring constantly to ensure smooth consistency.
  3. As the mixture begins to thicken, add remaining half and half, Old Bay seasoning, celery seeds, & whipping cream.  Heat to simmer, stirring constantly.
  4. Reduce heat to low, add crab meat & sherry.  Stir gently until heated through & serve.
  5. Top each bowl with freshly ground pepper to taste.

Candy Coated Pecans

Serves 6-8

Ingredients

1 large egg white ¼ c. loosely packed light brown sugar
½ tsp vanilla extract 2 c. Zenobia Mammoth Pecans
¼ c. sweetened coconut flakes

Directions

  1. Preheat the oven to 250°F.  Line a baking sheet with parchment paper.
  2. Place the egg white in a medium sized stainless steel bowl & whisk until frothy.  Add the brown sugar & vanilla & stir until smooth.
  3. Add the pecans & coconut, if desired, & stir until well coated.  Pour the mixture onto the prepared baking sheet & arrange in a single layer.
  4. Set aside at least 30 minutes & up to two hours.  Transfer to the oven & bake, stirring occasionally, for 1 hour.
  5. Immediately loosen the nuts with a spatula & set aside to cool.

Chicken & Vegetables Over Pasta

Serves 4

Ingredients

4 chicken breasts, cubed 1 c. sliced mushrooms
2 tbsp butter 14-16 oz. cubed tomatoes (1 can)
2 tbsp olive oil 2/3 c. dry white wine
1 large onion, finely chopped 4-6 tbsp heavy cream
2 garlic cloves, crushed 2 tsp Italian seasoning
2 bell peppers (red, yellow, or green) cut into 1½” cubes salt & pepper
pasta to serve

Directions

  1. Season the chicken with salt & pepper to taste.  Heat oil and butter in a skillet; fry the chicken until browned all over.  
  2. Remove the chicken from the skillet.  Add the onion & garlic to the skillet & cook gently until just beginning to soften.  
  3. Add the bell peppers to the skillet with the mushrooms & continue to cook for a few minutes longer, stirring occasionally.  Add the Italian seasoning.  
  4. Add the tomatoes & plenty of seasoning to the skillet & then transfer the vegetable mixture to an oven safe casserole.
  5. Place the chicken on the bed of vegetables.  Add the wine to the skillet & bring to a boil.  Pour the wine over the chicken & cover the casserole.  
  6. Cook in a preheated oven at 350°F. for 50 minutes.  When ready to serve, add cream & serve over pasta.

Crab Cocktail

Serves 4

Ingredients

1 lb. lump crab meat 2 large cucumbers, diced
1 tbsp lemon juice ¼ tsp salt
¼ tsp paprika ¼ tsp tarragon
2 tsp parsley flakes 1 c. sour cream

Directions

  1. Lump Crab MeatCombine cucumbers, lemon juice, salt, paprika, tarragon, & parsley in blender for 3 minutes.
  2. Add sour cream to the mixture.
  3. Mix well; refrigerate for 20 minutes or until chilled.
  4. Place lump crab meat in cocktail dishes & chill until ready to serve, then pour dressing over crab dishes.

Chef’s Note: This recipe was the First Place winner in the 1971 National Hard Crab Derby in Crisfield, MD.

Asian Food Grocer Snack PackI have to tell you, I LOVE me some Pocky.  Luckily I live in a really diverse area where they’re actually sold at grocery stores like Lucky and Safeway.  When I was younger the only place I could get things like Pocky and Yan-Yan was a little corner store near my house run by some nice Phillipino people.  Otherwise I would have had to go into Chinatown in Oakland.

So I realize that this is something that some people may not be familiar with if you don’t live in such an ethnically diverse area as myself.  So Asian Food Grocer will now ship them directly to you.  You can get these goodies shipped right to you.  This is a packet of various Japanese goodies for $15.99.  I admit that I’d be skeptical to purchase any candy that doesn’t have English on the packaging (only because I can’t otherwise know what flavor to expect), but I can personally vouch for Pocky.  It’s basically a thin breadstick dipped in chocolate.  And they also have the kind that has nuts in the chocolate.  I’ve heaed the Hello Kitty pies are good, but never personally had one.  Check it out and try something new for a change 🙂
