Turkey Chilaquiles

Serves 6

Ingredients

2 tbsp vegetable oil 1½ c. red onion, chopped
4 oz. green chiles, diced (1 can) 10 oz. tomatoes & green chiles, diced (1 can)
3 c. leftover turkey, shredded 16 oz. chunky salsa (1 jar)
salt & black pepper 5 c. tortilla chips, crushed
1½ c. shredded Mexican 4-cheese blend ¼ c. cilantro leaves, chopped
¼ c. sour cream

Directions

  1. Preheat oven to 400°F.
  2. Heat vegetable oil in a large oven-safe skillet, over medium-high heat. Add onions & saute until soft. Add green chilies, diced tomatoes, leftover turkey & salsa. Adjust seasoning with salt & pepper, to taste. Top with tortilla chips & then cheese. Place skillet in oven & bake for about 20 minutes.
  3. Remove from oven. Garnish with cilantro & serve immediately with side of sour cream.

Taco Soup

Serves 6-8

Ingredients

1 lb. lean ground beef ½ c. onions, diced
15-16 oz. black beans (1 can) 15-16 oz. pinto beans (1 can)
14.5 oz. DelMonte Diced Tomatoes with Zesty Mild Green Chiles (1 can) 14.5 oz. DelMonte Diced Tomatoes with Zesty Jalapeños (1 can)
11 oz. Green Giant Mexicorn (1 can) 14 oz. beef broth (1 can)
1 pkg. Old El Paso Taco Seasoning 1 tbsp salt
1 tbsp pepper ½ tbsp garlic powder
½ tbsp chili powder 16 oz. sour cream
1 pkg. Kraft Mexican 4 Cheese Blend, shredded

Directions

  1. Dice the onions. Rinse & drain all cans of beans.
  2. Crumble & brown beef in a large pot over medium high heat.
  3. Once the meat starts to brown, add salt, pepper, garlic powder & chili powder, stir.
  4. Add onions & mexicorn, stir. When the meat is fully cooked, add beans & cans of diced tomatoes.
  5. Reduce heat to low, add beef broth, taco seasoning & stir to mix.
  6. Cover pot & let soup simmer on low for 30 minutes.
  7. Serve in a bowl, top with spoon full of sour cream & shredded cheese.

Chef’s Note: For red-meat free soup, substitute ground turkey in place of beef & chicken broth in place of beef broth. For vegetarian soup, double the beans called for in place of the meat & use vegetable broth instead of beef or chicken broth.

Ali’s Famous Enchilada Casserole

Ingredients

2 lbs. ground beef 2 taco seasoning packets
Fresh Pico de Gallo Extra thin soft corn tortillas
1 can Campbell’s Fiesta Nacho Cheese soup 16 oz. shredded Mexican style cheese

Directions

  1. In a stock pot, brown beef with pico de gallo. Add taco seasoning & the amount of water called for by the seasoning packet. Add soup. Stir until the beef has a thick creamy sauce, simmering for about 10 minutes on medium heat.
  2. Layer the rest like a lasagna. In a 9″x13″ pan, place a single layer of tortillas. Spoon in half of the meat mixture & cover with half of the cheese. Add another layer of tortillas, the rest of the meat, & then the rest of the cheese.
  3. Bake at 350°F until cheese is melted & bubbly. Cut into squares & serve with sour cream, guacamole, & fresh pico de gallo if desired.

Chef’s Note: If your grocery doesn’t carry fresh pico, you can make it yourself by combining finely diced tomatoes, white onions, cilantro, jalapeno, & lime juice. Or just dice up the tomatoes & onions & simply use that.

Mexican Lasagna

Ingredients

12 flour tortillas 2 lb. hamburger or other ground meat
2 Taco Seasoning mix packets 2 lb. can refried beans
1- 1.5 bags shredded Mexican style cheese Traditional Mexican food toppings (tomatoes, sour cream, onions, lettuce, etc)

Directions

  1. Prepare ground meat &taco seasoning as per instructions on packet.
  2. Lightly grease a 9″x13″ baking dish.
  3. Layer the dish as so: 4 tortillas layer 1, taco meat layer 2, re-fried beans layer 3, cheese layer 4.
  4. Repeat layering process with an extra layer of tortillas to finish the top. Sprinkle cheese on top of tortillas.
  5. Bake at 350°F for 20-25 minutes or until cheese is golden brown & thoroughly melted.
  6. Add on a top layer of traditional toppings you choose, cut into lasagna squares & serve.
