Stromboli

Serves 8-12

Ingredients

1 lb. pizza dough ¼ lb. Swiss cheese
¼ lb. sharp provolone ¼ lb. tavern ham
¼ lb. hard salami ¼ lb. slicing pepperoni
1 egg Italian Seasoning
Flour Sweet or Hot Peppers, drained

Directions

  1. Thaw pizza dough according to directions on package.  Roll out dough to about 14-16″ square (if you can only get one side squared, then have that away from you).
  2. Beat one egg & add Italian seasoning to taste.  Brush top of rolled dough.
  3. Layer the deli selections meat, then cheese, then meat, etc.  You can overlap the layer closest to you, but you want to leave an inch or so on the right & left, & 2″ at the edge farthest from you.
  4. The peppers are optional.  If you are adding them, liberally spread a layer just above or below the middle layer of cheese.
  5. Roll or fold the layers of food away from you.
  6. Brush on egg mixture on the exposed dough as you go.
  7. Fold the last bit towards you over the roll of food; fold the loose dough at the sides in to the center.  Coat with egg & flip onto a baking sheet lined with parchment paper.
  8. Coat all remaining surfaces, even if you slop some on the paper.
  9. Cut 3 or 4 slices into the top of the loaf about half way deep.
  10. Bake at 350°F for about 45 minutes or until the dough is browned & cheese is bubbling out of the slices.
  11. Let the dish rest a few minutes before serving.  Slide into 1″ wide slices to serve.


Chef’s Note: Pizza dough is often sold as 2-1 lb. balls of dough, so you might as well make 2. In step 6, I prefer to fold about 3 times, leaving the top edge of dough that you don’t layer exposed.  You can freeze the leftovers and reheat it later.

Decadent Huevos Doritos

Kickin’ it old school Food Askew, recipes were shared and inspiration occurred!  Our chef for this recipe, randilicious, was inspired by SweetIrony!’s Huevos Doritos and his overflowing amount of leftover chili and voila!  Decadent Huevos Doritos were born!

Serves 6-8

Ingredients

1 small bag Nacho Cheese Doritos 2 eggs, yolk & white
1 egg white Shredded Cheddar cheese
2 – 3 c. randilicious chili

Directions

  1. Scramble together the 2 whole eggs & 1 egg white.
  2. Spread chips onto a plate.
  3. Place scrambled eggs over the top of the Doritos.
  4. Add shredded cheddar over top, to taste.
  5. Top with chili.
  6. Top with more cheese.

Chef’s Note: I actually used a slightly healthier alternative called Cactus Joe 100% Stone Ground Corn Nacho Cheese chips instead of Doritos.

White Chocolate Ice Cream

Yields 1 qt.

Ingredients

1 c. milk 2 large eggs
12 oz. white chocolate chips (1 bag) 1½ c. heavy cream
1 tsp vanilla extract

Directions

  1. Start with a saucepan that will fit everything, & bring the milk to a simmer.  While that is heating, beat the eggs in a medium mixing bowl.  Add the hot milk very slowly to the eggs. Once it is combined very well, put the egg & milk mixture back in the pan & put it over low heat.
  2. Whisk the mixture (now a custard) until it thickens & will coat the back of a spoon & leave a trail when you run a finger over it.  Remove it from the heat & stir in the chocolate until it’s melted. 
  3. Pour the mixture through a mesh strainer into a large clean bowl.  Allow it to cool slightly, then stir in the cream & vanilla. 
  4. Cover the bowl & refrigerate until cold or overnight.  Stir the mixture one more time, then put it in your ice cream maker following the manufacturer’s directions. 
  5. Eat immediately for soft serve or freeze for at least two hours for a firmer consistency.

Chef’s Note: For a slight change up, I added roughly chopped peppermint bark candy to the ice cream maker about 5 minutes before the ice cream was done in the machine.

Broccoli Casserole

Awhile back, the church my husband’s family attends in Oregon put together a recipe book as a fundraiser for the church.  It is a professionally printed and bound book, Generations of Cherished Recipes from St. Thomas Becket Parishioners.  My mother-in-law gave me a copy for Christmas because the family submitted heavily, so it was her way of passing on a lot of their family recipes to me.  So I’m going to periodically publish some of the recipes bestowed upon me and spread the love!

Serves 4

Ingredients

10 oz. frozen broccoli (1 pkg) 1 pint cottage cheese
1 egg, beaten 1 pkg saltine crackers
1 cube butter or margarine 1 pkg Lipton Onion Soup mix

Directions

  1. Broccoli by sk8geek on FlickrMelt butter.  Mash crackers.  Mix together.  
  2. Cook broccoli as directed on package.  Do not drain the broccoli.  
  3. Mix everything together and bake at 350°F for about 45 minutes until brown on top.

Huevos Doritos

Serves 1

Ingredients

1 small bag Nacho Cheese Doritos 2-3 eggs
Shredded Cheddar cheese Taco Sauce

Directions

  1. Scramble two or three eggs.  Crush the Doritos up just a little, & put on the plate.  
  2. Put scrambled eggs over the top of the Doritos.  Add shredded cheddar over the top, to taste.  
  3. Top with your favorite taco sauce.  Eat.

Chef’s Note: It might sound kind of trashy, but good is good.  Taco Bell mild sauce works REALLY WELL.
