Hot Fudge Sundae Cake

Ingredients

1 c. flour ¾ c. granulated sugar
2 tbsp Cocoa (good stuff if possible) 2 tsp baking powder
¼ tsp salt ½ c. milk
2 tbsp vegetable or canola oil 1 tsp vanilla extract
1 c. chopped nuts (optional) 1 c. brown sugar
¼ c. Cocoa (separate from the 2 tbsp) 1¾ c. hot water
Garnish nuts, ice cream, whipped cream, & Maraschino cherries

Directions

  1. Preheat over to 350°F.
  2. Grease a 9″ square pan.
  3. Mix flour, granulated sugar, 2 tbsp cocoa, baking powder, & salt.
  4. Add milk, oil, & vanilla & mix with fork until smooth.
  5. Spread the mixture evenly in the pan.
  6. Sprinkle evenly with brown sugar & ¼ c. cocoa.
  7. Pour hot water over the batter. DO NOT mix.
  8. Bake 40 minutes. Let stand for 15 minutes.
  9. Serve with ice cream & spoon fudge over top. Finish with whipped cream, nuts, & a cherry.

Pound Cake

Ingredients

6 eggs 3 c. sugar
8 oz. Philadelphia cream cheese 3 c. flour
1 tsp vanilla 3 sticks salted butter
½ c. powdered sugar 2 tbsp concentrated lemon juice

Directions

  1. Layout cream cheese & butter to soften at room temperature. Then in a mixing bowl add butter& cream cheese together & mix in a mixer.
  2. Add sugar to mixture. Then add flour & eggs alternately.
  3. Add vanilla.
  4. Spray bunt cake pan with cooking spray, preferably the kind made for baking with flour.
  5. Bake in a preheated 325°F oven for 1 hour 25 minutes.
  6. Let the cake rest in the pan for 10 minutes, then invert onto a serving tray or plate.
  7. You can also make a glaze for the top of the cake. Mix the powdered sugar & lemon juice & drizzle over the top while still warm.

Chef’s Note: To change up the taste of your cake, you can add 1 tsp of either coconut or lemon flavoring instead of the vanila.

Whitefish Manzana

Serves 6

Ingredients

4 whitefish fillets, about 2 lb. (tilapia, grouper, etc.) 1 jar unsweetened applesauce
parmesan cheese fresh basil
Italian seasoned breadcrumbs extra virgin olive oil
flour 3 eggs
splash of milk or heavy cream

Directions

  1. Preheat oven to 350°F.
  2. Make an egg wash with the eggs & cream, whisk well with a pinch of salt. Rinse & pat dry the fillets.
  3. Dredge the fillets in the flour, dip in the eggs, & bread them.
  4. Heat the olive oil in a medium skillet over med-high heat, just before smoking, & sauté the breaded fillets quickly (2 at a time should fit in the pan). Brown the fillet on one side, then the other for just a second, then place on a baking sheet (second side down). No need to oil the pan, there should be plenty of residual oil left on the fish.
  5. Once all the fillets are in the pan, place the fresh basil leaves on top of the fillets lengthwise. 2-3 per fillet depending on size.
  6. With a small spoon, cover most of the fillets with the applesauce, leaving about ¼” edge. Then cover the applesauce with the parmesan cheese. The more the better if you love cheese.
  7. Bake in the oven for about 12-15 minutes, depending on your oven. You’ll know it’s done when it’s good & flaky – check it with a fork.

Chef’s Note: Hint on the dredge: use one hand for the flour & the other for the eggs – a dry hand, wet hand kind of thing. Mix up the two & your fingers quickly quadruple in size. I find sautéed spinach & garlic mashed potatoes complement the dish well.

Chicken Strips

Serves 2-4

Ingredients

8 chicken breast tenderloins 3 large eggs
½ c. water 3 c. flour
1 tbsp salt 1 tbsp black pepper
1 tbsp oregano 1 tbsp garlic powder
1 tsp paprika 1 tsp cayenne pepper

Directions

  1. Preheat deep fryer to 375°F (using oil of choice).
  2. Combine eggs & water in bowl.
  3. In separate bowl, mix remaining dry ingredients.
  4. Dip chicken strips in egg mixture.
  5. Then, roll strips in the flour mixture.
  6. Repeat steps 4 & 5 for a second coating.
  7. Fry strips, 2-4 at a time, in deep fryer for 5-8 minutes or until deeply golden.

Bad but Delicious Honey Butter Chicken

Ingredients

½ c. flour 1 tsp salt
1 tsp paprika ¼ c. margarine or butter
1-2 lb boneless/skinless chicken breasts, cut into chunks 1/8 c. honey
1/8 c. butter 1/8 c. lemon juice

Directions

  1. Preheat oven to 400°F.
  2. Combine flour, salt, pepper, & paprika.
  3. Dredge chicken pieces in flour.
  4. Melt butter & pour into a baking pan.
  5. Add pieces of floured chicken in single layer, turning chicken to coat with butter.
  6. Bake for 10 minutes.
  7. Make honey butter sauce: Melt 1/8 c. butter in a pan. While melting add 1/8 c. lemon juice & 1/8 c. honey to butter, & mix with a whisk.
  8. After the chicken has cooked 10 minutes, pour honey butter sauce over chicken & cook an additional 10 minutes or until cooked through.
